So as I mentioned before, my birthday was this past month. But for several reasons I decided to celebrate this past saturday, on the menu? Spinach dip, birria and piña colada cake.
The spinach dip is kind of obligated now, since its perfect for a small bite before the big meal. It's birria we're talking about here, so I do expect for people to eat a second serving.
Now, if you have never eaten birria and you're wondering what it is, well is sort of a stew. Kind of.
It's pieces of brisket cooked in a chili sauce (dry chilies, onion, garlic, tomatoes, cumin, vinegar, cloves) for several hours in the oven. And at the end, the meat is tender and spicy and very delicious.
My cake? Homemade. I have a horrible experience with store bought cakes or box mixes (for some odd reason all I can taste is oil and eggs), so I made my own cake. Coconut bread, pineapple jam and cream cheese frosting (infused with coconut extract and pinapple juice).
Which knock off another of my 15 recepies every homecook should know list. That is something I hadn't mention here, but I'm working my way up.
